Hobs with overhead extraction

Condensation can be a problem in many kitchens as pans bubbling away on the hob produce both heat and moisture. To prevent this, and the peeling paint and mould that result, install an extractor. If the extractor has an internal, motorised fan, check that the motor runs quietly when on. If not, see whether the fan can be mounted on an outside wall. If you would rather not have an extractor hood obstructing your headroom, consider a down-draught system.

PROFESSIONAL GAS HOB

Many top notch cooks favour gas hobs because they heat up quickly and the temperature is easy to control. Space can be wasted between four burners, but here, the area between pan grids holds two useful pan rests.

LOW-LEVEL HOB

Comparable to gas in flexibility an induction hob only allows electric energy to be turned into heat inside the cooking pan, so the hob surface remains at a safe, moderate temperature.
